Man, just looking at this week’s sales list, you can definitely tell that Easter is coming up!  Lots of ham and veggies – some things that make some wonderful tasting meals!  This is a perfect time to pick up a couple of turkeys – serve one now and freeze one for later!

Main Dishes

  • Lasagna Rolls – With cream cheese, sausage and green pepper, this is one of my favorite recipes and its great for company, too.  It can look fancy, but it’s also simple to throw together.  Hy-Vee has the pasta sauce and noodles on sale for this one.
  • French Onion Turkey Casserole – If you do make a turkey have some leftovers, this looks to be a unique way to use it up.  The nice thing about casseroles is that you can freeze them easily too!  I actually prefer cold turkey sandwiches to turkey served as a big meal.
  • Ham & Cheese Party Rolls – Again, a perfect way to use leftovers!  Just some ham and some rolls you’re more than half way towards your next meal.
  •  – This is on our menu this week.  With the barilla pasta on sale and some of the tomatoes that I have in our stockpile, this comes together super quick and makes great leftovers.
  • Ham & Cheese Pasta – another creative use of leftover ham!  Toss some pasta, ham and cheese with some spices and you’re well on your way.  I haven’t tried this recipe, but it looks good and uses ingredients frequently on sale.
  • Crispy Onion Chicken – Sick of ham and turkey?  Chicken time!  Pick up an extra container of fried onions (because maybe you’re making green bean casserole also?) and serve up this chicken dish.

Okay, so a few weeks ago, I posted a pulled pork recipe.  But guess what?  I’ve found one that I like soooo much better!

Pulled Pork Sandwiches

Ingredients

  • 2-3 lbs boneless pork roast (you can use pork shoulder, pork tenderloin, or whatever)
  • 3 cups beef broth (or 3 cups water and 1 T beef bouillon)
  • 12 oz dr. pepper (or root beer - 1 can)
  • 1 T minced garlic
  • Rolls
  • Optional: Barbeque sauce or buffalo sauce

Instructions

  • Combine water, root beer, beef bouillon, minced garlic and sweet mesquite seasoning in a medium sized bowl. Stir to combine.
  • Put pork in your crock pot and pour liquid mixture over the top.
  • Cook in your crock pot on low for 7-8 hours, or on high for 4-5 hours.
  • Drain the liquid from your crock pot.
  • Remove any large pieces of fat.
  • Shred pork using 2 forks.
  • You can either serve without sauce (it’s that good!) or add in barbeque sauce or hot sauce. If you serve it plain, people can always add their own sauce.
  • Cut rolls in half and put desired amount of pork on bread.

Notes

Freezer Tip: This freezes really well. Just put the leftover meat in a freezer bag, date and label and freeze away! Just re-heat to serve.

      Nope, never have! And TOTALLY delicious without, so I’ve even stopped looking for it.
