Homemade Chocolate Chip Creamsicles!

Oh summer! How I love thee! Kids outside playing. Pool is filled up. (Who cares if it's just a kiddie pool? Don't judge me.) Baseball is happening. (Course, isn't always baseball happening? I mean, they start in March and go to October...what other sport does that?!) A lot of good is to be had during summer.

One thing that is REALLY good to do in the summer is to make homemade creamsicles. (Course, it's really good any time of the year. Again, don't judge me.) Now, I don't know if there's an official definition of what goes into a creamsicle versus a popsicle. But, to my little ol' noggin, a creamsicle is ice cream based and a popsicle isn't. Pumpkin Muffins with Cream Cheese Swirl

Pumpkin is commonly associated with the season of Fall, right?  As well it should be because that's when pumpkins start showing up everywhere.  In lattes, in breads, in donuts, on porch steps, everywhere!  But pumpkin doesn't always have to be eaten in just the Fall.  I was looking in my pantry the other day, spied a random can of pumpkin filling, remembered the cream cheese that I had in the fridge and I knew that pumpkin muffins are perfect even for January!

Now I love it with the cream cheese layer, but that's actually optional. You can skip that step and then you'll have just pumpkin muffins.  Still wonderful in their own right.  The cream cheese does add an extra oomph!  But it does add some complexity.  And if today is a day you just need simple, skip it.  It'll make a little fewer muffins, but that's A-OK!  You'll always have my permission to simplify things in the kitchen. I've posted this recipe before, but I don't think it gets the love it deserves. It's a fabulous recipe and one that I often crave! But I think the reason it isn't more popular is because it was meant for a jelly roll pan. Those are awesome pans, let me tell you -- but they're really only great if you often have need to cook for a bigger crowd AND if you actually have one. (That said, I only used to do desserts on my jelly roll pan, but lately, I've been roasting lots of meats and veggies on them (like fajitas!) and they work beautifully even for that!) Read More...
