Here we go!  The contractors are just about here, so of course, my kitchen has been moved to my living room.  When they show up the first day, they’ll move the appliances out of the kitchen.  The microwave and frig will go into the entryway.  The oven and dishwasher will go into the garage. Check out this post to see the demolition!

But we still gotta eat!  And like I wrote last time, I want to eat without chaos.  Well, minimal chaos.  Here’s my plan!

I froze a lot of meals!

Normally, when I do freezer meals, it’s casseroles or soups that I haven’t cooked yet.  On the day before I want to eat them, I take them out of the freezer and into the frig.  Then they’re ready to bake when I am.  That won’t really work this time.  There’s no telling when I’ll get my oven bake.  Therefore, this time, I froze meals that were already cooked.  And I froze them in smaller portions.  This allows me, for the next few weeks, to take a meal out of the freezer and microwave it for that night’s dinner.

Here’s what I froze:
Chicken, Cheese & Green Chile Enchiladas
Beef Stew
Tuna Noodle Casserole
Baked Spaghetti
Salsa Chicken
Tex Mex Chicken
Pizza Casserole
Buffalo Chicken
Pulled Pork
Chile Colorado Burritos
Italian Sausage Soup
Peanut Butter & Jelly Sandwiches
And really, there are many, many more meals that I could have made and froze.  These ones were just easy and filled my freezer well!

FreezerRecipes

I froze a lot of ingredients!

I will have a working microwave, crockpot and griddle.  You can believe that I’ll put them to good use!  While I’ll be able to cook some meals that aren’t already frozen, everything plate that I dirty will have to be washed in the bathroom sink.  Every serving spoon or spatula will have to be cleaned in the bathroom sink.  Every fork, knife and spoon that I use will have to be washed in the bathroom sink.  Every measuring cup and spoon that I use will have to be washed in the bathroom sink.  That’s gonna be a pain! 

We’ll be relying on paper plates and plastic utensils, but to also help things along, I’ve prepped a lot of ingredients that will makes easy meals:

Ground beef, frozen into about ½- and 1-pound portions.
Cooked and diced chicken
Already cut up carrots & celery (for soups)
Pasta
Scrambled eggs
Meatballs

I’ve prepared a list of recipes that I can make!

In addition to the full meals that I listed above, I’ve also made a list of easy meals that I can make with the tools that I have – microwave, crockpot & griddle.  And when I say easy, I mean easy.  Because remember – without a kitchen sink, there isn’t much that I want to dirty up! 

Here’s what is on our list:
1. Chicken Tacos
2. Nachos  (either using the same meat that I use for Chicken Tacos or ground beef)
3. Taco Salad (again, either using Chicken Taco meat or ground beef)
4. French Toast
or French Toast Sticks (right on the griddle!)
5. French Onion Burgers<(again, on the griddle)
6. Paninis
7. Chicken Noodle Soup(I’ll do this in the crockpot instead of on the stove)
8. BBQ or Buffalo Pulled Pork Sandwiches
9. Quesadillas(Normally, I bake these, but it also works well on griddles)
10. Grilled Burritos
11. Slow Cooker Potato Soup
12. Spaghetti & Meatballs(Warms up great in the crockpot)
13. Meatball Subs
14. Buffalo Chicken Sandwiches
Really, that doesn’t start to look too bad, does it?  This could be quite doable!  Ready or not, here we go!
