The weather here in Nebraska has been beautiful lately! But I know it can turn at any time – I certainly remember Halloweens full of snow. So it’s always possible. But while the great weather lasts? I’ll soak it up!
This October will be a fun month for us! My nephew is getting married this month in St. Louis, so we’ll take a little mini vacation to see him tie the knot. Of course, we’ll visit the Arch while we’re there. We’re also watching my Mr. 11 turn into Mr. 12. Birthday boy! And one week in October, many of my co-workers that work remotely will be in the office for the week – that’s always fun!
There’s also a few days that my kids don’t have school because of Parent Teacher Conferences. Expect lots of snacking those days! Through it all, I’ll keep menu planning. Goal #1: Prevent the 5:00 p.m. panic when I wonder what’s for dinner. Goal #2: Have all the ingredients on hand and save money! Plan with me!
