Slow Cooker Ham & Bean Soup

Ingredients

  • 1 lb dried navy beans
  • 1/2 lb carrots (about 4 large) sliced
  • 4 celery stalks sliced
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 1 bay leaf
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • pepper, to taste
  • 2 Tbsp olive oil
  • 4 cups chicken broth
  • 3 cups water
  • 2 cups cooked ham chopped
  • 1 tsp salt (if needed)

Instructions

  • Rinse beans in a colander. Put in slow cooker.
  • Add veggies, spices (except salt), oil, broth, water to the slow cooker.
  • Cook on low for about 8 hours or until beans are soft but not mushy. After about 4 hours or halfway through the cooking time, add the ham.
  • Add salt, if needed when done. Serve!
