Ingredients

  • 1/2 pound Smoked Sausage cut into 1/2-inch pieces
  • 2 medium zucchini sliced
  • 2 medium tomatoes sliced (or a pint of cherry tomatoes)
  • 1 pint mushrooms
  • 1 red pepper diced
  • 1/2 large onion diced
  • 1/4 cup olive oil (or melted butter)
  • 1 envelope onion soup mix or you can substitute 2 Tbsp dried onions and 1/4 teaspoons onion powder
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 425°F.
  • In a large bowl, combine all the ingredients. Divide between two pieces of double-layered heavy-duty foil (about 12-in. square). Fold foil around sausage mixture and seal tightly.
  • Bake for 30-40 minutes. Check that the vegetables are tender.
  • Open foil carefully to allow steam to escape and serve.
