Ingredients
1/2poundSmoked Sausagecut into 1/2-inch pieces
2medium zucchinisliced
2medium tomatoessliced (or a pint of cherry tomatoes)
1pintmushrooms
1red pepperdiced
1/2large oniondiced
1/4cupolive oil (or melted butter)
1envelope onion soup mix or you can substitute 2 Tbsp dried onions and 1/4 teaspoons onion powder
1tablespoonbrown sugar
1/4teaspoonsalt
1/4teaspoonpepper
Instructions
Preheat oven to 425°F.
In a large bowl, combine all the ingredients. Divide between two pieces of double-layered heavy-duty foil (about 12-in. square). Fold foil around sausage mixture and seal tightly.
Bake for 30-40 minutes. Check that the vegetables are tender.
Open foil carefully to allow steam to escape and serve.
