Loaded Baked Potato Soup


  • 4 large baked potatoes (about 4.5 - 5 cups worth), baked, peeled and diced
  • 2/3 cup butter
  • 1/3 cup flour
  • 6 cups milk
  • salt & pepper , to taste
  • 4 green onions, chopped & divided (optional - lovely with or without them)
  • 12 slices of bacon, cooked, crumbled and divided (or about 1 1/2 'cans' of bacon pieces)
  • 1 1/2 cups cheddar cheese, divided
  • 8 ounces sour cream


  1. If not done already, bake the potatoes, cool them, then peel them and dice them. Not super small, but not very big either.
  2. In a sauce pan over low heat, melt butter and then add flour. Stir until smooth. Cook 1 minute stirring constantly.
  3. Add milk slowly. Cook over medium heat, stirring often until thick and bubbly.
  4. Add potatoes, salt & pepper, 2 tablespoons of the green onions, 1/2 of the bacon and 1 cup of cheddar cheese. Cook until heated through.
  5. Stir in sour cream. Add in more milk if too thick.
  6. Serve with cheese, bacon pieces and green onions on top.
