Tuscan Sausage & Potato Soup

Ingredients

  • 1 lb ground and cooked sausage
  • 1 onion (diced)
  • 6 medium potatoes (peeled and diced into 1" chunks)
  • 4 cups chicken broth
  • 1 tbs Italian seasoning
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp granulated garlic
  • 1/2 tsp ground pepper
  • pinch of red pepper flakes
  • 2-3 kale leaves (destemmed and chopped)
  • 1 cup heavy whipping cream

Instructions

  1. Combine sausage, onions, potatoes, chicken broth and all the seasonings in a 3 quart or larger slow cooker
  2. Cook on low for 4-5 hours or until potatoes are done
  3. Add chopped kale and cream 1 hour before serving and continue to cook on low
  4. Serve hot directly from slow cooker
