Breakfast Sausage Egg Cups
Family-friendly breakfast that comes together quickly, but also sets a special scene at the breakfast table.
Servings 12 cups
Baking Mixture:
- 1/2 cup Bisquick or homemade baking mix
- 1/2 cup milk
- 2 eggs
Sausage Mix:
- 1 pound ground breakfast sausage
- 1/2 cup salsa
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
Prepare Baking Mix Mixture:
In a bowl combine bisquick, milk, and eggs. Whisk until well combined.
Place about 1 tablespoon baking mix mixture into each muffin cup.
Prepare Sausage Mixture:
Cook sausage until browned and done. Drain off any grease.
Add salsa & cheese to meat and mix well.
Divide meat mixture between muffin cups on top of the baking mix mixture.
