Monster Cookie Bars

Designed for a jelly roll pan.  Easily made gluten-free.  Serves a crowd!

Ingredients

  • 1/2 c butter
  • 1 c white sugar
  • 1 c brown sugar
  • 3 eggs
  • 1 1/2 c peanut butter
  • 1 tsp vanilla
  • 2 tsp baking soda
  • 4 1/2 c oatmeal
  • 2 c chocolate chips
  • 2 c M & M’s

Instructions

  • Preheat oven to 350º F.
  • Cream the butter and sugars together. 
  • Add eggs and peanut butter and mix.
  • Stir in vanilla, baking soda and oatmeal.
  • Stir in chocolate chips and M & M’s.
  • Put in an ungreased jellyroll pan. Bake for 15-20 minutes.  Be careful to not overbake.  Let cool before cutting as they are really gooey before they've set.
