Freezer Friendly Breakfast Burritos

Makes 12-14 burritos depending on the size of the tortilla and how stuffed you make them.

Ingredients

  • 12 ounces sausage (or 1 lb of ground turkey or ground beef)
  • 1 packet taco seasoning (can skip if you want - add a little chili powder and/or cumin instead, if desired)
  • 1 can black beans, drained and rinsed (can use less if you want)
  • 1 can Rotel tomatoes
  • 1 1/2 cup spinach (a large handful)
  • 5 eggs, beaten
  • dash of milk (2 Tablespoons or so)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 c shredded cheddar cheese
  • 12-14 tortillas

Instructions

  • Brown meat with taco seasoning until cooked. Drain.
  • In empty pan, saute spinach for just a minute or two until it starts to wilt.
  • Add in eggs, milk, salt & pepper. Cook until eggs are scrambled, stirring constantly.
  • Add meat, black beans and tomatoes back into the pan. Mix.
  • Add to a tortilla. Leave enough room to be able to roll it up.
  • Add a sprinkling of cheese on top.
  • Fold it like a burrito because it is one! You're done!

Notes

  • To serve: Microwave for 60 seconds until heated through.
  • To freeze: Put the rolled burritos next to each other on a cookie sheet. Once filled, place in freezer for a few hours. Take them out and put into freezer safe bag. To eat, microwave for 90 seconds or so. Might take long depending on how frozen they were. I find it works best to flip 1/2 way through.
  • Wanna go low(er) carb? Skip the tortilla and just eat the "stuffing" out of a bowl.
