Instant Pot Chicken, Broccoli & Rice Casserole

Ingredients

  • 2 Tbls butter or olive oil
  • 1.5 - 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic (1 tsp minced garlic)
  • 1 small onion
  • 1 tsp garlic salt
  • 1/2 tsp pepper
  • 1 1/3 cups white rice (not instant)
  • 1 1/2 cups chicken broth (or water)
  • 3/4 cup milk
  • 1 1/2 Tbls flour
  • 2-3 cups broccoli, steamed (I just microwave a steamer bag)
  • 1 1/2 cups cheddar cheese, shredded

Instructions

  • Turn Instant Pot onto saute. Add butter or olive oil.  When hot, add chicken, onion, and garlic.  (If your chicken is already cooked, just add onion & garlic until it's cooked, then add the chicken.)
  • Cook until onion starts to get translucent. Add rice, broth and seasonings. Mix.
  • Whisk together milk and flour and set aside.
  • Cook on manual high pressure for 6 minutes. When the timer is up, do a quick release.
  • Immediately stir in milk & flour mixture.  Mix well.
  • Add broccoli and cheese.  Stir.  Enjoy!
