1.5 - 2poundsboneless, skinless chicken breasts, cut into bite-sized pieces
2clovesgarlic (1 tsp minced garlic)
1small onion
1tspgarlic salt
1/2tsppepper
1 1/3cupswhite rice (not instant)
1 1/2cupschicken broth (or water)
3/4cupmilk
1 1/2Tblsflour
2-3cupsbroccoli, steamed(I just microwave a steamer bag)
1 1/2cupscheddar cheese, shredded
Instructions
Turn Instant Pot onto saute. Add butter or olive oil. When hot, add chicken, onion, and garlic. (If your chicken is already cooked, just add onion & garlic until it's cooked, then add the chicken.)
Cook until onion starts to get translucent. Add rice, broth and seasonings. Mix.
Whisk together milk and flour and set aside.
Cook on manual high pressure for 6 minutes. When the timer is up, do a quick release.
Immediately stir in milk & flour mixture. Mix well.
