Coconut Curry Chicken and Broccoli

  • 2 chicken breasts
  • 1 head broccoli diced
  • 2 tsp avocado oil


  • 1 Tbsp avocado oil
  • 2 tsp minced garlic
  • 1 small knob of ginger minced
  • 1 Tbsp lemongrass paste
  • 1 Tbsp brown sugar
  • 1 tsp red curry paste
  • 1 can coconut milk 14 oz
  • 2 Tbsp fish sauce or soy sauce
  • Lime juice to taste


  1. Dice chicken and broccoli into small bite, sized pieces.
  2. In a large skillet over medium heat add 2 tsp avocado oil. Then add chicken and cook
  3. thoroughly. Remove from pan.
  4. In the same skillet add 1 Tbsp avocado oil over medium heat. Then add garlic, ginger, and lemongrass paste and saute until fragrant. Add brown sugar and curry paste and saute for another minute or two. Add coconut milk, fish sauce, and lime juice and simmer for a few minutes.

  5. Add in the broccoli and cooked chicken, and saute for several minutes until broccoli is at desired level of tenderness.
  6. Serve over rice. Enjoy!
