Slow Cooker Hawaiian Chicken
- 1.5 lbs boneless skinless chicken thighs
- 1 15 oz can diced pineapple
- 1 jalapeño minced (remove ribs and seeds for less heat)
- 1 red onion minced
- 3 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 T sriracha or sambal olek
- 1 T yellow mustard
Spicy Ranch Slaw
- 1/2 cup mayo
- 1/4 cup olive oil
- 1/4 cup water
- 1 small jalapeño ribs and seeds removed for less heat
- 2 tsp minced garlic
- 1 tsp dried dill
- 1/4 cup fresh cilantro
- 1/2 tsp onion powder
- 1/2 tsp salt
- dash black pepper
Tacos
- flour tortillas
- cabbage sliced
- pickled red onions
Hawaiian Chicken
Place all ingredients for slow cooker Hawaiian chicken in the crock pot, stir and cook on high for 2-3 hours or low 4-5 hours.
Remove chicken and shred, then place on a sheet pan and broil on high for 10-15 minutes.
