Ingredients

Slow Cooker Hawaiian Chicken

  • 1.5 lbs boneless skinless chicken thighs
  • 1 15 oz can diced pineapple
  • 1 jalapeño minced (remove ribs and seeds for less heat)
  • 1 red onion minced
  • 3 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 T sriracha or sambal olek
  • 1 T yellow mustard

Spicy Ranch Slaw

  • 1/2 cup mayo
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 small jalapeño ribs and seeds removed for less heat
  • 2 tsp minced garlic
  • 1 tsp dried dill
  • 1/4 cup fresh cilantro
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • dash black pepper

Tacos

  • flour tortillas
  • cabbage sliced
  • pickled red onions

Instructions

Hawaiian Chicken

  • Place all ingredients for slow cooker Hawaiian chicken in the crock pot, stir and cook on high for 2-3 hours or low 4-5 hours.
  • Remove chicken and shred, then place on a sheet pan and broil on high for 10-15 minutes.

Spicy Ranch Slaw

  • Slaw: Combine all slaw sauce ingredients in a food process and pulse until smooth. Pour over chopped cabbage.

Assembly

  • Place chicken in warm tortillas, top with slaw. Add pickled red onions and sliced cabbage if desired. Serve and enjoy!
