Gluten-Free Pumpkin Muffins

Incredible pumpkin muffins free of gluten and refined sugar

  • 2 cups gluten free oats
  • 1/2 cup maple syrup or date sugar
  • 1 cup pumpkin puree not pumpkin pie filling
  • 1/4 cup applesauce
  • 1 tbsp vanilla extract
  • 2 eggs or egg substitute
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of sea salt
  • Chocolate chips if desired


  • Preheat the oven to 375°F and grease a muffin tin or line with paper liners.
  • Place the oats in the food processor and blend them into flour.
  • Add all the rest of the ingredients and pulse until a smooth consistency.
  • Mix in chocolate chips, if desired, then portion into 12 muffin tins.
  • Bake for 15-17 minutes, remove, cool, and enjoy!
