Gluten-Free Pumpkin Muffins
Incredible pumpkin muffins free of gluten and refined sugar
Servings 12 muffins
- 2 cups gluten free oats
- 1/2 cup maple syrup or date sugar
- 1 cup pumpkin puree not pumpkin pie filling
- 1/4 cup applesauce
- 1 tbsp vanilla extract
- 2 eggs or egg substitute
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of nutmeg
- Pinch of sea salt
- Chocolate chips if desired
Preheat the oven to 375°F and grease a muffin tin or line with paper liners.
Place the oats in the food processor and blend them into flour.
Add all the rest of the ingredients and pulse until a smooth consistency.
Mix in chocolate chips, if desired, then portion into 12 muffin tins.
Bake for 15-17 minutes, remove, cool, and enjoy!
