Freezer Friendly Breakfast Burritos

Makes 12-14 burritos depending on the size of the tortilla and how stuffed you make them.


  • 12 ounces sausage (or 1 lb of ground turkey or ground beef)
  • 1 packet taco seasoning (can skip if you want - add a little chili powder and/or cumin instead, if desired)
  • 1 can black beans, drained and rinsed (can use less if you want)
  • 1 can Rotel tomatoes
  • 1 1/2 cup spinach (a large handful)
  • 5 eggs, beaten
  • dash of milk (2 Tablespoons or so)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 c shredded cheddar cheese
  • 12-14 tortillas


  1. Brown meat with taco seasoning until cooked. Drain.
  2. In empty pan, saute spinach for just a minute or two until it starts to wilt.
  3. Add in eggs, milk, salt & pepper. Cook until eggs are scrambled, stirring constantly.
  4. Add meat, black beans and tomatoes back into the pan. Mix.
  5. Add to a tortilla. Leave enough room to be able to roll it up.
  6. Add a sprinkling of cheese on top.
  7. Fold it like a burrito because it is one! You're done!
