Sausage Breakfast Casserole


  • 1 pkg crescent rolls
  • 1 lb mild sausage, browned and drained
  • 6 eggs, beaten
  • 2 cups shredded cheddar cheese
  • 1/2 cup salsa (optional)


  1. Preheat oven to 350.
  2. Spray a 9x13 pan with cooking spray and roll out crescent rolls on the bottom of the pan.
  3. Brown & drain your sausage. If using salsa (and I would!), mix the salsa in with the sausage. Pour on top of the rolls.
  4. Top with the beaten eggs.
  5. Top with the cheese.
  6. Bake for 30 minutes until cheese is brown.
