Creamy Black Bean Soup

Equipment

Ingredients

  • 1 tbsp avocado oil
  • 1 onion chopped
  • 1 red bell pepper chopped
  • 3 tsp minced garlic
  • 2 tsp cumin
  • 2 tsp paprika
  • 32 oz chicken broth
  • 3 14.5 oz cans black beans drained and rinsed
  • 1 14.5 oz can petite diced tomatoes
  • 1 tsp oregano
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • Juice from half a lime
  • Salt and pepper to taste

Instructions

  • In a large stock pot, heat the oil over medium heat. Add the onion and bell pepper and sauté until tender.
  • Add garlic, cumin, and paprika and sauté for one minute or just until fragrant.
  • Add in your broth, black beans, tomatoes, oregano, Worcestershire sauce, and soy sauce.
  • Mix well and bring to a boil, then reduce to a low simmer for 15 minutes.
  • Puree some or all of the mixture depending on desired texture, preferably using an immersion blender.
  • Add the lime juice, salt, and pepper to taste, and serve!
