Are you still wondering what to do with the last of your garden tomatoes and don’t want to can them?

I dehydrated several batches of ripe tomatoes and they came out great. It was less work than canning and the tomatoes can easily be re-hydrated to add to recipes, can be eaten like ‘chips’ or added to sandwiches for extra crunch.

I had lots of smaller cherry and Roma tomatoes and I simply cut them in half and placed them on the dehydrator for a day and a half. If you don’t have a dehydrator, check your local thrift stores for used ones. You can usually find them really cheap.

I also use my dehydrator to make banana crisps. Whenever, bananas are less than $0.40/lb I buy a huge batch and dehydrate the ones we won’t use. My kids devour them.

Got green tomatoes? Try a simple green tomato cake recipe with cream cheese frosting. It tastes alot like carrot or spice cake and is super moist. Your kids will never know you snuck veggies into their cake.
