I love sheet cake recipes. Really, any thing that uses those big 15×10 jelly roll pans are wonderful for me. Every couple of weeks, I bring in treats for my co-workers and, of course, my husband wants to bring some for his co-workers too. Making one recipe that makes so many servings is a time-saver!
This is a peanut butter sheet cake that, like most sheet cakes, is super simple. Most people do a homemade peanut butter frosting with a peanut butter sheet cake, but I like chocolate. And I like the taste (and ease!) of canned frosting, so that’s what I use! Plus peanut butter and chocolate are a fabulous combination! If you want to do a homemade frosting, I’ve included it here.
Peanut Butter Sheet Cake
Ingredients
Cake Ingredients:
- 1/4 cup creamy peanut butter
- 1 cup water
- 1/2 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs
- 1/2 cup skim milk
- 1 tsp vanilla
Peanut Butter Frosting:
- (or use a can of chocolate frosting!)
- 1/2 cup (1 stick) butter
- 1/2 cup smooth peanut butter
- 4 cups powdered sugar (confectioners' sugar)
- 1/3 cup milk
- 1 teaspoon vanilla extract
Instructions
Cake Directions:
- Preheat oven to 375 degrees.
- In a medium to large pot add the peanut butter, water, and butter and bring to a boil. Remove from heat.
- Mix together the sugar, brown sugar, flour, salt, and baking soda. Add to the peanut butter mixture.
- Add the eggs, milk, and vanilla to the pan and mix well.
- Pour into greased jelly roll pan.
- Bake for 15 minutes at 375 degrees.
For the Frosting:
- In a large saucepan over medium heat, melt the butter.
- Add the peanut butter and mix until smooth.
- Remove from the heat. Add milk, powdered sugar and vanilla and stir very well.
- Frost the cake while the cake is still warm. If using the homemade frosting, the frosting should be warm too.
