Add this recipe to the “really easy to make, but even kids like it” list. It’s pizza in a casserole form. Because of that, it won’t surprise you that it’s named “Pizza Casserole”. It’s really versatile too. I listed the ingredients that I usually use, but feel free to adapt it. Don’t like mushrooms? Leave ‘em out. Love black olives on your pizza? Add ‘em in. Like a lot of pepperoni? Use more. Don’t have pizza sauce on hand? No worries – just use a little extra spaghetti sauce. It’s about whatever you and your family like.
I will warn you – with this recipe as written, it makes a lot! I usually do 1 pound of hamburger for my young family, but a large family will probably want to do the full 2 pounds. Because it makes a lot (even with just 1 pound of beef), I make a batch, but freeze half of it for a later date. Which is awesome when 1 cooking session = 2 meals!
Pizza Casserole
Ingredients
- 1-2 lbs hamburger
- 1 onion
- 1 green pepper
- 1 4 oz can mushrooms
- 1 32 oz jar spaghetti sauce
- 1 10.5 oz jar pizza sauce
- 1 tsp salt
- 2 oz . pepperoni
- 12-16 ounces rotini noodles (other small pasta shapes like shells or bow ties would work too)
- 1 lb mozzarella
Instructions
- Brown hamburger with onion and green pepper.
- Boil noodles.
- Mix all ingredients together except cheese.
- Put into a large 9x13 casserole dish or 2 8x8 dishes.
- Add cheese on top.
- Bake at 350 until hot and cheese is melted. Takes about 45-60 minutes for a 9x13 pan and about 30 minutes for an 8x8 (or 9x9) pan.
- If freezing, put together, but just don't bake. Allow to cool in the fridge. When cool, wrap tightly with foil and plastic wrap. When ready to serve, thaw overnight in fridge. You'll need to add baking time since it will be starting out cold.
