I have professed my love for fajitas many times over.  I adore them.  What’s not to love about them?  They’re delicious, fun to order at a restaurant (especially if they can make the platter sizzle!), but they’re also easy to make at home.  And I love the new way that I’ve been making them – on a big ol’ sheet pan in the oven! Adore it.  Could.Not.Be.Easier!  I really think I could eat them for days on end.  I really could.

And now making fajitas is even simpler because I have a homemade fajita seasoning mix in my recipe collection!  Now, I’ll be the first to admit that I’m not always a DIYer.  (I paid a very nice construction firm to build me a very nice kitchen.)  And I’ll also be the first to admit that I don’t make homemade everything.  (I love some things just the way they are -I’m looking at you Heinz Ketchup and you Hidden Valley Ranch dips.)

But I hadn’t ever found a fajita seasoning packet that I loved.  And, for me, there are 2 main reasons that I’ll make something homemade:

  1. To make it significantly less expensive than I can buy it.
  2. To make it taste better than I can buy it.

This falls into both categories, but really, it’s the 2nd one that tips the scales for me.

The extra special bonus is that I can make a bunch of it at once, keep it in a jar in my cupboard and use as much or as little as I want.  It’s harder to do that with the fajita seasoning packets.  For this recipe, the quantity that I have below is about 4 servings – depending on how much you use.  Wanna make just a small amount of fajitas?  Use less.  Wanna make a large amount?  Use more.  See that?!  Versatility!

This also isn’t a spicy recipe, so if you enjoy your fajitas muy caliente, add some more chili powder or cumin.  You could even throw in some cayenne pepper – I won’t tell!

It calls for chicken bouillon granules, which you can buy the “powder” form in the store, but I just use the cubes and crush it up with the back of a spoon.  Easy enough!

Homemade Fajita Seasoning

Ingredients

  • 4 Tablespoons cornstarch
  • 4 Tablespoons chili powder (or more if you like it spicy; this is pretty mild)
  • 4 teaspoons salt
  • 4 teaspoons paprika
  • 4 teaspoons chicken bouillon granules (or 4 bouillon cubes crushed up)
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin

Instructions

  • Combine ingredients well. This makes 4 batches - use about 2 1/2 Tablespoons for 1 packet of mix. This quantity fits into an 8 ounce bell jar for me.
