I’m guessing we’ll all be seeing one another at a Bakers this week!  I mean, judging from their sales, this is a good week to go.  Check out all of this week’s best prices here!  Here are my menu suggestions:

Main Dishes 

    • BLTs! – Turkey Bacon is on sale, so use it in some BLTs (Bacon, Lettuce, Tomato sandwiches).  Get all fancy if you want and make BLTTs (Bacon, Lettuce, Tomato and Turkey sandwiches).
    • Bean Dip – Okay, this isn’t really a main dish, but if you make something Mexican like tacos or enchiladas, make a bean dip to go with it.  This one is my favorite!
    • Tuna Noodle Casserole – My husband wouldn’t be excited about this one, but I would.  This recipe is the same one that my mom used to make when I was a child (except she wouldn’t do the bread crumbs).  I might have to dig this out when he’s out of town next week!
    • Sausage & Veggie Packets – Sausage is on sale this week – and it’s still grilling weather.  Seems like an easy choice to me!
    • Grilled Chicken & Pineapple Kabobs – I haven’t tried these yet, but I still really want to. It might seem weird to grill pineapple, but it is one of my favorite ways to eat it.  With both chicken and pineapple on sale this week, this might be the time.Looking for a good side dish?  We like these roasted red potatoes!  I’ve included the recipe for a full batch, but that’s a lot for my small family, so I usually half the recipe.  It’s a nice side dish for when you grill out or even bake chicken.roastedredpotatoes

Roasted Red Potatoes

Ingredients

  • 3 pounds small red potatoes (skins on)
  • 1/3 cups olive oil
  • 1 packet onion soup mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 cup grated cheese (cheddar or parmesan) - optional

Instructions

  • Preheat the oven to 400F. In a medium bowl, mix the olive oil, onion soup mix, garlic powder, and pepper. Set aside while you prepare the potatoes.
  • Cut each potato into quarters. You want them roughly the same size. The bigger they are, the longer that they'll need to bake.
  • Add the potatoes to seasoning mix. Toss to evenly coat - just use your hands. Spread the potatoes onto a sided sheet pan which has been sprayed with cooking spray.
  • For fun, make sure that one of the cut sides of potatoes is touching the bottom of the sheet pan (so that it browns nicely).
  • Cover the sheet pan with aluminum foil. Bake for 15 minutes, then remove the aluminum foil. Do not stir.
  • Bake for another 20 minutes (uncovered), stirring after 10 minutes.
  • Transfer to a serving bowl and, if desired, toss with your choice of cheese.
