I’ve made a few different soups with my Instant Pot (I have this one).  There have been some definite misses.  I’ll keep working on those.  But there has also been some hits.  This started off somewhere in the middle – it was just okay.  But a few tweaks later and I love it!  Using the Instant Pot makes it really good. Even though it doesn’t cook very long, it tastes like it has!

This recipe also works in the slow cooker.  Just put the same ingredients in the slow cooker and let it simmer away.  I like to serve with garlic bread or cheesy biscuits.

It’s a super simple soup – nothing strange in it.  Probably all stuff you already have in your pantry or your freezer.  That makes it easy to cook any time my dinner plans have gone awry or I only have a few minutes to devote to dinner preparation.  Love that!


Vegetable Beef Soup (Instant Pot or Slow Cooker)

Ingredients

  • 2 pounds ground beef
  • 1 medium onion, diced
  • 1 tsp minced garlic or 2 cloves of garlic
  • 6 cups frozen mixed vegetables (carrots, corn, peas, green beans, lima beans) - whatever you prefer
  • 3 (15 oz) cans of diced tomatoes
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

Instant Pot Instructions:

  • Set your Instant pot to sauté setting. Cook meat, onions and garlic until brown.  Or if you have cooked ground beef in the freezer, just throw it in and "cook" until no longer frozen).
  • Add all the other ingredients to the Instant pot.
  • Add lid and and set to sealing.
  • Click the manual button and set the time for 4 minutes. 
  • Allow it to naturally release the pressure for 5 minutes and then do a quick release.
  • Remove lid, stir, and add more salt and pepper to taste.
  • Enjoy!

Slow Cooker Instructions:

  • Brown your hamburger, onions and garlic until done.  Drain.
  • Add all ingredients to the slow cooker.
  • Cook on low for 6-7 hours or on high for 3-4 hours.
  • Enjoy!
