Homemade Italian Turkey Sausage Patties

Who doesn’t love savory Italian sausage patties? Whether you enjoy it alongside your morning pancakes, mixed into pasta, or sprinkled over your favorite pizza, Italian sausage is classic crowd-pleasing favorite.

For the longest time, I never thought about making Italian sausage from scratch. But as we’ve made some dietary changes for health reasons, I’ve started recreating homemade versions of many of favorite convenience foods. And as it turns out, just like most dishes, homemade really is better.

How to Make Homemade Italian Turkey Sausage Patties

This homemade Italian turkey sausage recipe only takes about 2-3 extra minutes compared to opening a package or store-bought sausage. The best part is you control the ingredients. No fillers. No additives. Just meat and spices. You can make it spicier, milder, heavy on the fennel, or fennel-free. Customize it exactly how you like it.

1. Preheat Your Skillet

Preheat a cast iron skillet over medium-high. While you can use any type of skillet, cast iron creates a crispy exterior that’s hard to beat. Lightly coat the bottom of the skillet with avocado oil and allow it to heat while you prepare the sausage mixture.

2. Season. Season. Season.

Combine all of seasonings: Italians seasoning, parsley, fennel, paprika, onion powder, salt, pepper, and a dash of cayenne. Place the ground turkey in a mixing bowl and sprinkle the seasoning mixture evenly over the meat. Using your hands, gently mix everything together until the spices are evenly distributed.

3. Cook the Patties

Next, form the meat into patties about 1 1/2-2 inches in diameter (or whatever size you prefer.) Place the patties in the hot skillet and sear several minutes on each side until the internal temperature reaches 165°F, using a meat thermometer to ensure they are fullly cooked.

This recipe is great for meal prep. Make a large batch and store for quick breakfasts throughout the week. Store in the refrigerator for 4-5 days in an airtight container or up to 3 months in the freezer. Simply reheat in the microwave, oven, or skillet when ready to enjoy.

Ingredients

  • 2 lbs. ground turkey meat
  • 1 tablespoon Italian seasoning
  • ½ tablespoon parsley

Instructions

  • Place a cast iron skillet on the stove top over medium heat and coat the bottom with a layer of avocado oil.
  • In a small bowl, combine seasoning ingredients: Italian seasoning, parsley, fennel, paprika, onion powder, salt, pepper, and cayenne. Mix well.
  • In a medium sized bowl, combine turkey meat with seasoning and mix together until thoroughly combined.
  • Form the meat into patties with a diameter of 1.5-2 inches and place on heated skillet.
  • Cook the patties for 3-5 minutes on each side, or until the interior temperature reaches 165ºF.
  • Remove to a plate to cool and serve. Store leftovers in an airtight container for 4-5 days in the fridge and up to 3 months in the freezer
