I’ve really been messing up dinner time lately.  I haven’t followed my own advice to menu plan – or at least, I did so poorly.  We also had a couple of events come up that meant changing dinner plans.  I’ve freshly realized how much I appreciate having a meal or two (or three!) in the freezer.  So I’m going to spend some extra time this holiday weekend doing just that – getting some things in the freezer!

But first…let me help you make a menu!  Loooking at what’s on sale this week, there are lots of choices!

Main Dishes

  • Cheeseburgers – You can go all fancy if you like and do a stuffed burger, but really, I like a good burger topped with plain ol’ cheddar cheese!  Baker’s has these on sale this week.  Fareway has hot dogs on sale that would go well with them.
  • Beefy Mac & Cheese – With all the ground beef that’s been on sale lately, this could be a real winner.  I think I’ll make a big batch and freeze them this weekend.  How easy would that make dinner some time?
  • Barbeque Pulled Pork Sandwiches – A friend of mine delivered her baby 8 weeks early and this is the meal that I brought her family.  It doesn’t get any easier than this!  Super Saver has the meat on sale.
  • BLTs (Bacon, Lettuce & Tomato) Sandwiches – No Frills and Bag N Save have all the ingredients on sale.  Cook your bacon in the oven and save yourself lots of hassle!
  • Tacos – Another simple meal that uses ground beef.  I usually have taco meat in the freezer; time to pull it out and make tacos.  Or maybe taco salad!
  • Since Super Saver has peanuts on sale, this is also a good time to buy some to make Salted Nut Roll Bars.Blueberries are on sale at Aldis and here’s a dessert that you can make with them.  It’s a coffee cake with a cream cheese layer.  At first, I didn’t think it was going to turn out – the batter seemed way too thick and I seemed to have way too much cream cheese layer.  But it turned out great!  At least all my co-workers loved it even if my 2-year-old didn’t!  I think this would be a fun 4th of July weekend breakfast or even great for a bridal or baby shower.  I made mine the night before I served it and just refrigerated it all night and then let it come to room temperature before serving.blueberrycreamcheesecoffeecake

Blueberry Cream Cheese Coffee Cake

Ingredients

For The Batter:

  • 1 c butter
  • 1 c sugar
  • 2 eggs
  • 1/4 c sour cream
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 c flour
  • 1 small carton fresh blueberries

For The Filling:

  • 2 (8 oz.) packages cream cheese
  • 1 egg
  • 1 c sugar
  • 1 tsp vanilla

For the Crumb Topping:

  • 1/4 c sugar
  • 1/2 c flour
  • 1/4 c butter

Instructions

Preheat oven to 350 degrees and coat a glass 9x13 pan with cooking spray.

    For The Batter:

    • Cream together the butter and sugar, then beat in the eggs and sour cream.
    • Add the baking powder and salt and mix a little more.
    • Add the flour a little at a time until completely mixed in.
    • Last, gently fold in the fresh blueberries.

    For The Filling:

    • Beat together the cream cheese, egg, sugar, and vanilla until smooth.

    For the Crumb Topping:

    • Mix the sugar, flour, and butter with a pastry blender (or fork) until crumbly.

    Putting it Together:

    • Spread half the batter into the bottom of the 9x13 pan. It won’t seem like you have enough, but you will.
    • Next, spread the cream cheese filling over the top.
    • Then with the remaining batter, place spoonfuls all over the filling (try to spread them out evenly).
    • Last, sprinkle the crumb topping over everything.
    • Bake for 50 to 55 minutes. Let the cake cool before serving.

      Hi Nicole,
      I am tasting your recipe blueberry cake and it is delicious. Not too sweet,very soft and the crunchy topping works great. It is very easy and quick to make. I will try it with different fruits in a future. Thank you.
