Do you remember those word association games where someone says a word and you say the first thing that comes to mind? Well If someone said “summer” what would you say? Summer Fun Bucket List? Beaches? Swimming? Hot? POPSICLES?!?! Yeah, I would say popsicles too. They are like the essence of my childhood on those sweltering summer days. But as an adult I decided they deserved a classy upgrade, so these delectable strawberry cheesecake popsicles were born.
Now most of my growing up years we were thrilled to just have those cheapo freezie pops as our ice cold treat on a hot day. You know, the ones in the little plastic sleeve? But every once in awhile mom would get out the popsicle molds and we would make our own. I honestly don’t even remember what kind we would make, I just remember that we made them and I thought it was so cool.
When I moved out on my own, I stuck with the store bought variety purely for the sake of convenience. But once I had kids, I knew I needed to give them some of those same fun memories I had from growing up. Plus, as a general rule, I always prefer to make things myself when possible, because I can control what goes into them.
We have made all kinds of varieties of popsicles, including breakfast popsicles. Sometimes I just toss frozen fruit in a blender and call it good, while others we follow an actual recipe.
These strawberry cheesecake popsicles are one of my faves. I actually kind of hate sharing them with the kids because they’re so good. Luckily, they’re super easy to make. You just toss the ingredients in the blender, pour into the popsicle mold and you’re done!
I also love that you can make these as big or as small as you want depending on the size of your popsicle mold. This recipe made 7 of the size I have, but you could have more or less depending on how big yours are. Built-in portion control….or not? lol. Anyway…these are amazing and you need to try them, so get on it soon!
Strawberry Cheesecake Popiscles
Ingredients
- 1 cup strawberries
- 1/2 cup plain yogurt
- 2 oz cream cheese
- 1/2 cup milk
- 1 tbsp honey
- 1 tsp vanilla
Instructions
- Dump all ingredients into a blender or food processor and pulse until smooth.
- Pour into popsicle molds, and freeze for 6 hours. Enjoy!
