Picture this. It’s been a long day. You forgot to prep anything easy for dinner. The kids are crabby and you’re too tired to put much effort in to making something. Enter these super easy tuna rice bowls! So easy, and filling, and customizable to your family’s individual tastes. It’s the perfect weeknight meal, and on a regular rotation in our house.

How to Make Tuna Rice Bowls

To make tuna rice bowls, you just need some rice, 2 cans of tuna, and some peas! An Instant Pot keeps this the easiest, but you could also make it work with some Minute Rice. I just cook up 2 cups of dry rice with 2 cups of water in my instant pot, and do a quick release. Then I add in 2 cans of tuna (we like to use the chunkier white albacore) and 1-2 cups of frozen peas depending on your preferences. I put the lid back on and just let it sit for about 10 minutes. Then we load up our bowls and top as we like!

How to Customize Your Tuna Rice Bowls

If you are a cheese loving household you can add cheese. My kids love to put ranch dressing on their bowls. My personal favorite is to add a little mayo, a splash of almond milk, some dill or ranch seasoning and some cayenne. It’s just super filling, and while it may not be gourmet fare, it just hits the spot when I don’t want to cook but I want dinner to taste good.

If you don’t have a pressure cooker, you can cook up a batch of Minute Rice on the stove and when it’s done, remove it from the heat. Then just add in the peas and tuna and put the lid back on. Let it sit until the peas thaw. Or if you prefer, you can warm up the peas separately to make sure they are soft and warm enough. This is an easy crowd pleaser, so be sure to file it away for that night this week when you don’t feel like cooking.
