Who doesn’t love a meal that takes just a few minutes to toss in the crock pot? Set it and forget it? Yep…that’s me! I mean, I was kind of lazy even before I had kids, but they have definitely increased my reliance on quick and easy meals. So this slow cooker “baked” egg casserole really hits the spot.
Ingredients Ideas for Egg Casserole
You can add whatever you want to your eggs, mix it up, turn on the crock pot, and bam…..a few hours later dinner (or breakfast) is ready! My recipe uses spinach, ham, tater tots, and cheese, but feel to personalize it with your favorite egg bake ingredients. You can add diced bell peppers, tomatoes, bacon, cooked ground sausage or mushrooms to this recipe. Really customize with it your family favorites!
Is it Breakfast or Dinner?
Personally, we like to do breakfast for dinner at least once a month. Usually because I am NOT a morning person and rarely ever get up to make those big stereotypical breakfast meals, so having it at dinnertime allows us to still enjoy those foods. However, if you get this started in your slow cooker right before you go to bed, you will enjoy a hearty and delicious breakfast when you wake up.
Slow Cooker Tip
Don’t forget to oil the crock pot, unless you enjoy spending a few hours and a lot of elbow grease trying to clean it up. This meal is super easy and customizable to your tastes, so definitely give it a try.

Slow Cooker “Baked” Egg Casserole
Ingredients
- 12 eggs
- 1 28 oz bag of tater tots
- 1 yellow onion diced
- 2 cups shredded cheese of your choice
- 2 cups ham diced
- 4 cups chopped spinach
- 1 cup milk
- Salt and pepper to taste
Instructions
- Coat the bottom and sides of your crock pot with oil or butter.
- Layer tater tots, onion, cheese, ham and spinach in the bottom.
- In a separate bowl, mix together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the ingredients in the crock pot.
- Set it to low and cook for 5-8 hours, then serve!
