Slow Cooker Ground Beef Stew!

It’s almost soup season!  Well, for those that thing there is such a thing as soup season.  I, personally, don’t think there is a soup season – I think everyday is part of soup season.  I eat it year round, but I’m willing to concede to those who think that while you CAN eat soup in the summer, it’s really BEST when you eat it in the fall and winter.  Okay, fine.  I can see your point.

So, then it’s almost soup season!  And this one is a great one – it’s family friendly.  It’s made in a slow cooker.  You can dump everything in and let it cook for a good part of the day and it will warm up your house and warm up your heart.


It’s not a fancy soup, but recipes don’t have to be fancy in order to be good.  It’s not a complicated soup, but recipes don’t have to be complicated to be good.  It’s not an expensive soup, but recipes don’t have to be expensive to be good.  It’s just warm and tasty.  I often pair it with grilled cheese sandwiches or just rolls & butter.  It fills our bellies without emptying our wallets.  I like that.

Slow Cooker Ground Beef Stew


  • 1 1/2 lbs ground beef
  • 1 onion, diced
  • 15 ounces diced tomatoes
  • 16 oz. package frozen mixed vegetables (I use the one with corn, green beans, peas, carrots)
  • 3-4 potatoes peeled and diced
  • 1 bay leaf
  • 8 cups beef broth or 8 cups water + 8 beef bouillon cubes
  • 2 teaspoons Worcestershire sauce (optional, but I love!)


  • Brown meat with onion and drain.
  • Add all ingredients to the slow cooker. Cook on low for 6-8 hours - the potatoes just need to be tender.
  • Enjoy!

    I wonder if you could use the frozen Southern Style Hash browns?

      Possibly! I’d be a LITTLE nervous because they are so small. So I’d probably add them 1/2 way through since you don’t want super mushy potatoes!
