Not every one loves casseroles, but I do.  Dishes that are a complete meal in 1 dish make dinner even easier.  I do usually add another vegetable or two in terms of a salad or more steamed veggies, but I feel like that is just icing on the cake.  Going the extra mile.

That’s why I like this recipe – it’s a complete meal!  It’s got rice.  And chicken.  And broccoli.  And cheese.  And the wonderful warmth that comes from a freshly made casserole.

Instant Pots can get dinner on the table really quickly – depending on the recipe, of course.  BUT…where they really shine is that Instant Pot recipes usually mean a short prep time and fewer dishes.  Because the Instant Pot can both saute dishes and pressure cook them, most meals can be done just in the 1 pot inside the Instant Pot.  One dish to dirty means one dish to clean.  In this case, that’s mostly true – assuming you use a steamer bag of broccoli.  That’s what I do.  Each time I make this casserole with the broccoli inside the Instant Pot, it never turns out right.  So I just make all of it and add a bag of broccoli at the end.  Stir.  Serve.

This would also make a good side dish – just leave out the chicken and maybe even add more broccoli, if you want.  That’d be really tasty too!

Instant Pot Chicken, Broccoli & Rice Casserole

Ingredients

  • 2 Tbls butter or olive oil
  • 1.5 - 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic (1 tsp minced garlic)
  • 1 small onion
  • 1 tsp garlic salt
  • 1/2 tsp pepper
  • 1 1/3 cups white rice (not instant)
  • 1 1/2 cups chicken broth (or water)
  • 3/4 cup milk
  • 1 1/2 Tbls flour
  • 2-3 cups broccoli, steamed (I just microwave a steamer bag)
  • 1 1/2 cups cheddar cheese, shredded

Instructions

  • Turn Instant Pot onto saute. Add butter or olive oil.  When hot, add chicken, onion, and garlic.  (If your chicken is already cooked, just add onion & garlic until it's cooked, then add the chicken.)
  • Cook until onion starts to get translucent. Add rice, broth and seasonings. Mix.
  • Whisk together milk and flour and set aside.
  • Cook on manual high pressure for 6 minutes. When the timer is up, do a quick release.
  • Immediately stir in milk & flour mixture.  Mix well.
  • Add broccoli and cheese.  Stir.  Enjoy!

    Are you supposed to sautee the chicken before cooking for 6 mins?

      Yes – that’s Step 1! Cook the chicken and onions.

    Made as stated with the exception of adding Grillmates vegetable seasoning (was a little bland for us without it)… cooked for 5 mins under pressure, let set for 1 min before quick release.
    Will make again!

    I made this tonight as my first Instant Pot recipe. Aside from doubling the rice I followed the recipe and it was absolutely delicious. Thank you for sharing it. 🙂

      If you double the rice do you have to double the broth?

        I did a 1:1 ratio with broth/rice. It was perfect. Sorry it took so long to get back to you. :o)

    This was delicious. It was not enough for my family of 4 – next time I will need to double which I think would be super easy in my instant pot.
