A super easy and healthy snack that’s been gaining traction at our place is chia seed pudding! There are so many delicious ways to prepare it, but my current favorite is with blueberry sauce. Not only does it taste great, but it only has 4 ingredients and takes all of 15 minutes to throw together. Plus, thanks to the chia seeds, it’s incredibly nutrient dense, with a healthy dose of protein, fat and fiber in every serving.
How to Make Chia Seed Pudding
This could not be easier to prepare, but does take a couple hours to set. It’s gluten-free, refined-sugar free, and vegan! All you need is the non-dairy milk of your choice (you can use dairy if you don’t need it to be vegan), some chia seeds, a little vanilla, and some frozen blueberries. You add 2 cups of your milk to a medium sized container with a lid, toss in 7 tablespoons of chia seeds, and 1/2 tsp of vanilla (you can omit if your milk is already flavored). Mix well, and then put it in the fridge to set for at least 4 hours. I like to leave mine overnight so its ready to enjoy first thing in the morning!
How to Make Blueberry Sauce
For the blueberry sauce, you just add 1.5 cups of frozen blueberries to a saucepan with 2 tablespoons of water. Sauté over medium heat until the blueberries begin to split open and you’ve got a thicker sauce. This should take 5-7 minutes. You can also make this ahead of time and chill it overnight. Now just portion your chia pudding into a serving size, top with blueberry sauce and enjoy! You can also enjoy this homemade blueberry sauce on its own, in oatmeal, on pancakes or buttermilk waffles.
Tips for this Recipe
- If this isn’t sweet enough, add a bit of honey or maple syrup to the chia seed pudding. My kids didn’t think it was sweet enough, but I thought it was perfect.
- If you like your pudding thicker, add more chia seeds and let it set longer.
- If the pudding is too thick, add more milk, mix it up, and let it set.
Feel free to experiment with different toppings too. Top this pudding with my homemade 3-ingredient strawberry jam or your choice of fresh fruit and chopped nuts. This is good in so many different ways!

Blueberry Chia Seed Pudding
Ingredients
- 2 cups non-dairy milk
- 7 Tbsp. chia seeds
- 1/2 tsp. vanilla
- 1.5 cups blueberries frozen
- 2 Tbsp. water
Instructions
- Add milk, vanilla, and chia seeds to a lidded container. Mix thoroughly and cover. Place in the fridge for at least 4 hours, overnight is even better.
- For the blueberry sauce, add blueberries and water to a saucepan over medium heat. Simmer gently until berries begin to burst and a thicker sauce begins to form. Remove from heat and refrigerate.
- Portion the chia pudding into serving bowls or cups, and top with blueberries. Serve!
