This might be my absolute most favorite crock pot meal of all time. Totally serious. I know I say that about a lot of meals, but I really mean it! Seriously though, these Hawaiian chicken tacos get a 5 star review from every member of my household, and considering we have some picky eaters, that is saying something! Not only is this super quick and easy to toss in the slow cooker, but it’s so incredibly flavorful and it makes a TON of tacos. Our family of four easily has enough leftovers for at least two more meals. And it’s still just as amazing as leftovers, if not more so, because the flavors have had time to meld. #winner
We are huge taco fans at our house. It’s just one of those meals that is so easy to throw together and everyone likes it. I know lots of people have Taco Tuesday on the regular at their house, and to be honest I’m really not sure why we don’t. Maybe because we don’t want to relegate tacos to just one day of the week?! Haha. Anyway, I always enjoy finding ways to mix it up and try some new flavors, and these savory sweet chicken tacos seriously hit the spot.
The Secret Ingredient for Hawaiian Chicken Tacos
My biggest, most important word of instruction to you though is this: You HAVE to top it with the spicy ranch slaw. You just have to. It takes the whole thing from good, to “Oh my goodness, I’m in HEAVEN!”
After a few times of making them we decided to top with some pickled red onions (yes I’m obsessed), and it was literal perfection. I make a large batch of my favorite 5-ingredient pickled red onions, so I always have some on hand. So many amazing flavors in one little bite. You can also add some shredded fresh cabbage for a little bit extra crunch.
I cannot sing the praises of this meal enough, so if you like pineapple, and you like tacos, and you like easy, THIS IS THE MEAL FOR YOU! Sorry I’m shouting, it’s just really that good. So quit sitting there already and go make you some! I promise you’ll thank me!

Hawaiian Chicken Tacos
Ingredients
Slow Cooker Hawaiian Chicken
- 1.5 lbs boneless skinless chicken thighs
- 1 15 oz can diced pineapple
- 1 jalapeño minced (remove ribs and seeds for less heat)
- 1 red onion minced
- 3 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 T sriracha or sambal olek
- 1 T yellow mustard
Spicy Ranch Slaw
- 1/2 cup mayo
- 1/4 cup olive oil
- 1/4 cup water
- 1 small jalapeño ribs and seeds removed for less heat
- 2 tsp minced garlic
- 1 tsp dried dill
- 1/4 cup fresh cilantro
- 1/2 tsp onion powder
- 1/2 tsp salt
- dash black pepper
Tacos
- flour tortillas
- cabbage sliced
- pickled red onions
Instructions
Hawaiian Chicken
- Place all ingredients for slow cooker Hawaiian chicken in the crock pot, stir and cook on high for 2-3 hours or low 4-5 hours.
- Remove chicken and shred, then place on a sheet pan and broil on high for 10-15 minutes.
Spicy Ranch Slaw
- Slaw: Combine all slaw sauce ingredients in a food process and pulse until smooth. Pour over chopped cabbage.
Assembly
- Place chicken in warm tortillas, top with slaw. Add pickled red onions and sliced cabbage if desired. Serve and enjoy!
