Has it been one of those days that got away from you, and dinnertime has arrived with nary an idea for what to make? Have no fear! Instant Pot “baked” potatoes are here! They cook up in 20-30 minutes depending on size, and they’re ready to enjoy with your favorite toppings.
I myself really enjoy the crispy skin that you get from the conventional method of cooking baked potatoes in the oven, but I’m often just not organized enough to get them started in time to be ready for dinner. So tossing them in the instant pot has proven much quicker and convenient.
How to Make “Baked” Potatoes in the Pressure Cooker
Making “baked” potatoes in the Instant Pot is incredibly simple. Pour 1 cup of water in your pressure cooker, insert the trivet, and then add your potatoes. I wash and prick holes in all of them before placing in the Instant Pot.
Be sure to select potatoes of approximately the same size. Otherwise you could end up with over or undercooked potatoes. Of course if you happened to select a bag of very randomly sized potatoes you can just err your timing on the side of the largest ones. It may result in potatoes that split, but better an overcooked potato than undercooked! Place the lid on the pressure cooker, and set it for the following times based on size:
Pressure Cooking Times for “Baked” Potatoes
- Small: 12 minutes
- Medium: 16 minutes
- Large 20 minutes
Allow 10 minutes of time for a natural pressure release, regardless of the cook time you select. Once your potatoes are done, you can use tongs to carefully remove them from the pot.
What to Serve with Baked Potatoes
Serve a baked potato as side dish or a load it up with toppings for a main course! Maybe you’re a traditionalist topping with bacon, cheese, sour cream, and chives. Maybe you like to keep it simple with just some butter, salt and pepper, or more adventourous sprinkling the potato with Everything But the Bagel seasoning. Maybe you like to top with broccoli cheddar soup. Or maybe you’re a bit of a gourmand, who would enjoy philly cheesesteak sloppy joes atop your fluffy mound of baked potato goodness. Ingredients
- 4-6 Russet potatoes
- 1 cup water
Instructions
- Pour one cup of water in the bottom of your instant pot, and insert the trivet.
- Select potatoes of the same general size, wash, prick with holes, and place evenly on top of the trivet.
- Pressure cook on high for the appropriate amount of time based on size of the potatoes. Small: 12 minutes, Medium: 16 minutes, Large: 20 minutes.
- Natural release for 10 minutes, then quick release, and carefully remove from pressure cooker.
