This is an oatmeal chocolate chip cookie in bar form. It’s a substantial cookie because of the oatmeal, but it’s a melty-gooey cookie because of the chocolate chips. This recipe is meant for a 9×13 pan, which is perfect for a family or if you’re not cooking for a big crowd. My family loves them! Yours will too!
Oatmeal Chocolate Chip Cookie Bars
Yummy, chocolate-y goodness in an oatmeal cookie bar!
Ingredients
- 14 Tbsp butter, softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups oatmeal, uncooked (rolled oats)
- 1 cup chocolate chips
Instructions
- Heat oven to 350°F.
- In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
- Add eggs and vanilla; beat well.
- Add flour, baking soda, cinnamon and salt; mix well.
- Add oats and chocolate chips; mix well.
- Press into an ungreased 9x13 glass cooking dish.
- Bake for 30 minutes. Let cool and then cut into bars.
