Oatmeal Chocolate Chip Cookie Bars!

It’s no secret around here that I love cookies.

But I also like cookie bars.  They’re easier in some ways, but they are still essentially a cookie in rectangular form!  Bars like:

This is an oatmeal chocolate chip cookie in bar form.  It’s a substantial cookie because of the oatmeal, but it’s a melty-gooey cookie because of the chocolate chips.  This recipe is meant for a 9×13 pan, which is perfect for a family or if you’re not cooking for a big crowd.  My family loves them! Yours will too!

Oatmeal Chocolate Chip Cookie Bars

Yummy, chocolate-y goodness in an oatmeal cookie bar!

Ingredients

  • 14 Tbsp butter, softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups oatmeal, uncooked (rolled oats)
  • 1 cup chocolate chips

Instructions

  • Heat oven to 350°F.
  • In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
  • Add eggs and vanilla; beat well.
  • Add flour, baking soda, cinnamon and salt; mix well.
  • Add oats and chocolate chips; mix well.
  • Press into an ungreased 9x13 glass cooking dish.
  • Bake for 30 minutes.  Let cool and then cut into bars.
